Tomato paste holds more lycopene than any fresh tomato on the shelf, and almost no one keeps it for what it does to skin. It sits in a small can behind the pasta, the cheapest concentrated source of one pigment that two human trials connected to how skin handles sunlight.

Lycopene is the red in a tomato. Heating and concentrating the fruit into paste ruptures its cell walls, so the body takes up far more lycopene from paste than from a raw tomato.

One more thing decides how much gets in. Lycopene is fat soluble, so it crosses into the blood on the fat eaten with it, and eaten dry most of it passes through.

Once absorbed it settles into tissues including the skin. There it acts as the most efficient quencher of singlet oxygen of any carotenoid in the diet, and singlet oxygen is one of the reactive forms of oxygen that ultraviolet light generates in skin.

This is where collagen comes in. When UV raises reactive oxygen in the dermis, it switches on MMP-1, a collagenase that cuts standing collagen faster than skin rebuilds it. Lycopene in the tissue soaks up some of that energy before the enzyme is triggered.

Two trials tested this with food rather than capsules. In a 2001 study in the Journal of Nutrition, nine people ate 40 grams of tomato paste with olive oil every day while ten others took olive oil alone, and after ten weeks the redness from a measured dose of UV was about 40 percent lower in the tomato group.

The effect was absent at four weeks and only clear at ten. The protection built slowly.

The second trial speaks more directly to collagen. Twenty women ate 55 grams of tomato paste a day, and compared with controls their skin showed less UV-induced MMP-1 and held on to more of a structural protein called fibrillin-1.

Two limits keep this honest. Both studies were small, and this is slow protection from the inside rather than a shield. It lowers how hard UV lands, it does not block UV, and it does not replace sunscreen.

This shift matters more after midlife. Estrogen helps hold MMP-1 in check, so as it falls through menopause that enzyme runs more freely and skin loses collagen faster.

Lycopene works on the oxidative trigger upstream of the enzyme, a route that does not run through estrogen at all. That makes it useful precisely when the hormonal support for collagen is fading.

Few skin measures cost less, and this one is already cooked, canned, and waiting in the pantry.

The Pantry Prescription

WHAT TO BUY:

Plain tomato paste, the concentrated kind in a small can or a squeeze tube, ideally no-salt-added. The trials used ordinary tomato paste, not a lycopene capsule, so the paste is the studied form. Concentrated paste carries far more lycopene than canned diced tomatoes or jarred sauce, and a glass jar or tube sidesteps the lining concerns of some cans.

HOW MUCH:

About 40 to 55 grams a day, which is roughly 3 to 4 tablespoons, always eaten with some fat. That range delivers close to 16 mg of lycopene, the amount used in both trials, and the fat is not optional because lycopene needs it to be absorbed.

HOW OFTEN:

Over a couple of months, a modest reduction in how easily skin reddens in sun, on the order seen in small trials. The collagen-enzyme and skin-protein findings come from a single 20-woman study and are early, so treat any visible change to skin as unproven. This protects from the inside and does not replace sunscreen or shade.

WHAT TO EXPECT:

A slow rise in macular pigment, which is a lab-measured risk marker, not something you will see or feel. Do not expect sharper vision, since the trial did not test eyesight. The honest goal here is consistent intake.

WHAT IT COSTS:

A small can of tomato paste runs about 1 to 2 dollars and lasts a few days at this amount, so figure roughly 10 to 20 dollars a month, among the cheaper things in this newsletter.

WHO SHOULD ASK FIRST:

Tomato paste is food and safe for most people. Its acidity can worsen reflux or heartburn, so go easy if that is you. High-dose lycopene supplements, not food amounts, have mild blood-thinning and blood-pressure-lowering effects worth raising with your clinician if you take medication for either. Check the sodium on salted pastes, and skip it if tomatoes trigger a nightshade sensitivity.

Whipped Tomato Paste and Olive Oil Spread

  1. In a small bowl, whisk 3 tablespoons of tomato paste with 2 tablespoons of extra-virgin olive oil until it turns glossy and lighter in color.

  2. Grate in one small clove of garlic, add a squeeze of lemon and a pinch of salt, and stir, loosening with a teaspoon of warm water at a time until it spreads.

  3. Spread it thick on toast, fold it into eggs, or stir it through warm grains; these 3 tablespoons carry close to the 16 mg of lycopene used in the trials, and the olive oil is what lets that lycopene get absorbed, so the fat is not optional.
