Losing bone and calcifying arteries look like opposite problems. They tend to arrive in the same decade of a woman's life, and the mineral involved is identical in both places.

Hydroxyapatite is the calcium phosphate crystal that makes bone hard. When it forms in the wall of an artery or along the fibrous ring that holds the mitral valve, it is the same lattice, assembled where nothing should be assembling.

Estrogen helped keep that line drawn. Acting through estrogen receptor alpha, it suppresses RANKL signaling inside vascular smooth muscle cells, one of the switches that lets those cells start behaving like bone-forming cells.

Serum estrogen runs inversely to vascular calcification in women, though most of that mechanism has been mapped in cells and animals rather than in her. Calcification on the mitral ring is more extensive in women than in men, and reported progression to the severe form runs 41 percent in women against 24 percent in men.

Now the molecule.

Phytate, or myo-inositol hexaphosphate, is the compound in beans, whole grains and seeds that nutrition textbooks filed under antinutrients because it binds minerals in the gut.

Phytate binds calcium past the gut as well. Small amounts are absorbed, circulate, and show up in urine, where the level drops to undetectable after about three weeks on a diet without it.

What it does to a crystal is mechanical rather than hormonal. Phytate adsorbs onto the surface of hydroxyapatite and interferes with the formation and growth of the next layer.

A pharmaceutical company built an intravenous version of that exact molecule and tested it. Across 52 weeks in 274 hemodialysis patients, coronary artery calcium volume rose 11 percent on the drug and 20 percent on placebo, and aortic valve calcification rose 14 percent against 98 percent (Raggi and colleagues, Circulation, 2020).

Worth stating flatly what that trial was: an intravenous drug, in patients on dialysis, at doses no plate of food delivers. No trial has put chickpeas in front of postmenopausal women and measured a calcium score.

Food-level evidence in people is thinner and indirect. Among 188 older cardiology patients, calcification on the mitral ring showed up in 39.7 percent of those in the lowest third for urinary phytate and 23.8 percent of those in the highest.

Skip IP6 or inositol hexaphosphate capsules if the calcification trial is your reason for wanting them, because that trial used an intravenous drug that is not sold in a bottle.

HOW MUCH:

One cup of cooked chickpeas, or one 15-ounce can drained lightly rather than rinsed hard. Cooked pulses run roughly 400 to 700 milligrams of phytate per 100 grams, which puts a serving in the few-hundred-milligram range, ordinary food territory and nowhere near the intravenous doses used in the trial.

HOW OFTEN:
