Under the earliest microscopes, in the 1670s, a Dutch draper named Antonie van Leeuwenhoek found strange crystals in a drop of semen.
Naming what made them took another two hundred and fifty years. Chemists called the family spermine and spermidine, after the fluid they were first drawn from, and the structure was not solved until 1926.
The one that matters here is spermidine, and it turned out to sit in almost every living cell. The richest place to find it in a kitchen is plain: a spoonful of wheat germ, the embryo of the wheat kernel that milling strips away to make white flour. It carries more than soybeans do.

The larger trial did not hold. When one hundred older adults took about a milligram of spermidine a day for a full year, memory did not improve over placebo (JAMA Network Open, 2022).
