On Cape Cod in sixteen oh five, Samuel de Champlain walked through a Nauset village and left the first European description of a root growing there. It had, he wrote, the taste of an artichoke.
He was wrong twice over. The plant is a sunflower, Helianthus tuberosus, and nobody has ever explained convincingly how Jerusalem got into its name.
What matters is underground. Nearly every tuber you have eaten stores its energy as starch. This one stores inulin.
Inulin is a chain of fructose units joined by a bond human digestive enzymes cannot cut. Depending on the variety and how long the tuber has been out of the ground, it can account for anywhere from under a tenth to nearly a third of the fresh weight.
So it passes the whole length of the small intestine untouched and reaches the large intestine intact.
There the bacteria take it apart. Fermentation acidifies the contents, and in acidic water calcium and magnesium stay dissolved instead of dropping out as insoluble salts. In rats, inulin diets enlarge and acidify the cecum and sharply raise absorption of both minerals.
The human work is smaller, and it was done in the right women.
A double-blind placebo-controlled crossover trial gave fifteen postmenopausal women ten grams a day of oligofructose-enriched inulin for six weeks. Fractional calcium absorption changed by about plus five percent on the fructan and about minus three percent on placebo. Magnesium moved almost identically.
Two of every three women responded. The ones who did had lower spine bone density to start with.
This matters because the main door is narrowing.
Across more than five hundred absorption measurements in one hundred and eighty-nine women followed for seventeen years, absorption efficiency fell by roughly two tenths of a percentage point each year with age, and took a separate one-time drop of about two points at the loss of estrogen.

That loss happens in the duodenum. Duodenal tissue from women in their sixties carries less of the calcium pump and channel proteins than tissue from women in their twenties, and the work showing estrogen drives those proteins is in mice and in cultured human cells.
The large intestine was never the main door. It is the one still fully open.
Absorption is not bone, though, and the trial built to close that gap did not. Three hundred postmenopausal women took calcium with or without short-chain fructo-oligosaccharides for two years, and bone density did not differ from control.
Turnover markers did move, and the women who began with osteopenia lost less.
None of these trials used the tuber. They used a chicory-derived blend of short and long chains. The sunchoke gives you native inulin, mostly longer chains, in a root that is also famous for gas.
The Pantry Prescription
WHAT TO BUY:
Firm, knobbly tubers with tight skin, no soft spots and no green tinge, sold as sunchokes or Jerusalem artichokes in the produce section from autumn through early spring. The studied form was different: a chicory-derived oligofructose-enriched inulin, sold as inulin or chicory root fiber.
HOW MUCH:
The absorption trial used 10 g a day of oligofructose-enriched inulin. Three ounces of raw sunchoke sits loosely in that range, but fructan content swings widely by variety and storage, so start at 1 oz a day for a week before going up.
HOW OFTEN:
Daily. The absorption trial ran 6 weeks. The 2-year bone trial used a smaller dose, 3.6 g a day, alongside 800 mg of calcium.
WHAT TO EXPECT:
Gas, at first, and possibly a great deal of it. What the trial measured was mineral absorption tracked with isotopes, not anything you can feel, and two years of a similar fiber did not move bone density. Treat this as a way to get more out of the calcium and magnesium already on your plate, not as a treatment.
WHAT IT COSTS:
USDA terminal markets were quoting 10 lb cartons at $24 to $32 in September 2026, which usually puts retail somewhere near $4 to $8 a pound. At 3 oz a day, roughly $25 to $50 a month.
WHO SHOULD ASK FIRST:
Anyone with irritable bowel syndrome, small intestinal bacterial overgrowth, fructan intolerance or a low-FODMAP diet, since inulin is among the most fermentable fructans there is. Anyone with a history of bowel obstruction or active inflammatory bowel disease. This does not replace calcium and vitamin D intake or osteoporosis treatment, and if bone density is the worry, that is a conversation with a clinician and a scan rather than a vegetable.

Shaved Sunchoke and Pear Stacks
Scrub 3 oz of sunchokes under cold water and slice them into paper-thin rounds, skin on.
Slice half a firm pear just as thin, then toss both in the juice of half a lemon so they hold their color, with salt and pepper.
Stack the rounds into four short towers, alternating sunchoke and pear, and finish with a drizzle of olive oil and a few crumbled raw walnuts.
Three ounces sits loosely in the range of the 10 g of fructans used in the trial, but the trial used a chicory powder rather than the tuber, so treat this as a start and not the studied dose. Halve it the first few times.
