At Johns Hopkins in the 1990s, a chemist named Paul Talalay went looking for the food that packed the most of a single protective compound. He found it in something almost nobody eats on purpose.
Three-day-old broccoli sprouts. His lab reported in 1997 that the young sprouts carry many times more of the compound's precursor than a mature head of broccoli, by some measures ten to a hundred times more.
The precursor is called glucoraphanin. On its own it does nothing. It has to meet an enzyme called myrosinase, kept in a separate compartment of the plant until you rupture the cells by chewing, and only then do the two combine into sulforaphane.
Myrosinase does not survive heat. Cook the sprouts and the reaction mostly fails, which is why sulforaphane is a raw-and-chewed proposition rather than a cooked one.
Sulforaphane behaves unlike the antioxidants printed on a label. It does not scrub up a free radical itself and get spent in the act.
Instead it slips into your cells and modifies a sensor called Keap1, which frees a switch called Nrf2. Nrf2 moves into the nucleus and turns on a bank of genes for the body's own defense enzymes.
Those enzymes tag reactive molecules from air, smoke, and everyday metabolism and escort them out, and they keep working for days after the sulforaphane itself is gone. You are not swallowing the antioxidant. You are switching on the ones you already build.
The clearest human test ran in Qidong, China, where the air carries a heavy pollutant load. In a 12-week randomized trial of 291 people, published in Cancer Prevention Research in 2014, a daily broccoli-sprout beverage raised urinary excretion of a benzene byproduct by about 61 percent and of an acrolein byproduct by about 23 percent.
Separate work at UCLA found that sulforaphane from broccoli sprouts switched those same defense enzymes on in the lining of people's noses and calmed their inflammatory response to diesel exhaust particles.

Notice what those trials measured. They caught enzymes turning on and pollutants leaving faster, which is the defense system working, not a disease prevented or a year of life added.
The reason this matters more with age is quiet. The Nrf2 pathway and the body's capacity to make glutathione, its master antioxidant, both decline over the years, and estrogen was one of the things holding that defense up.
Sulforaphane does not give the estrogen back. It reaches the same defensive switch from another direction, one that still answers after your hormones have gone quiet.
The Pantry Prescription
WHAT TO BUY:
Fresh broccoli sprouts, the pale three-to-four-day sprouts sold in a plastic clamshell in the refrigerated produce section, or broccoli seeds to sprout yourself in a jar. Choose bright, cool, dry-looking sprouts with no sliminess or off smell. If you reach for a powder or capsule instead, pick one that states it contains active myrosinase, or lists glucoraphanin plus myrosinase, since the precursor without the enzyme may never convert.
HOW MUCH:
In the pollutant trial the drink delivered about 40 micromoles, roughly 7 milligrams, of sulforaphane a day plus its precursor, and the airway study used up to 200 grams of sprouts prepared as a homogenate. A realistic food amount is a large handful of fresh raw sprouts, about half a cup to a cup, or 30 to 50 grams. Sulforaphane content swings widely by batch, so treat a daily handful as a steady food dose, not a measured one.
HOW OFTEN:
Daily or most days. The enzyme induction is catalytic and lasts a few days, so steady regular intake matters more than any single big serving.
WHAT TO EXPECT:
This is a mechanism-and-marker story, not a symptom story. Do not expect to feel anything. The human evidence shows the body's own defense enzymes switching on and certain airborne pollutants clearing faster, not a disease prevented or a change you will notice in the mirror. Use it as steady background support, eaten raw and chewed well.
WHAT IT COSTS:
Fresh sprouts run about two to five dollars an ounce in stores, so a box is a few dollars and a month of daily handfuls lands around fifteen to thirty-five dollars. Sprouting from seed at home costs a fraction of that, roughly cents per serving after a one-time jar and a bag of seeds.
WHO SHOULD ASK FIRST:
Raw sprouts of any kind can carry Salmonella, Listeria, or E. coli, so pregnant women, anyone immunocompromised, young children, and frail older adults should not eat them raw; cooking removes the risk but also the sulforaphane. Buy fresh, keep cold, rinse, and discard any that smell off. Large raw amounts of cruciferous vegetables can affect thyroid hormone production, mainly where iodine is low or thyroid disease is present, so check with your clinician if that is you. Broccoli and its sprouts contain vitamin K, which interacts with warfarin, so keep your intake steady and tell your prescriber if you take a blood thinner.

Cold Sesame Soba with Broccoli Sprouts
Toss about 150 grams of cooked and cooled soba or rice noodles, ready-made or leftover, with 1 teaspoon toasted sesame oil, 1 teaspoon tamari or soy sauce, and a squeeze of lemon.
Add a large handful of fresh raw broccoli sprouts and lift them through the noodles just before eating.
Eat right away with the sprouts raw and well chewed, since heat destroys the enzyme that makes sulforaphane and chewing is what releases it; a daily handful is a food-sized amount, lighter than the concentrated sprout drink used in the research.
